Hilary developed her passion for food while traveling through Europe and living in Copenhagen, Denmark. Upon returning to the States she enrolled in the Culinary Arts Program at The Institute of Culinary Education in Manhattan. After graduating she worked at restaurants in New York including Tabla and Eleven Madison. Seeking a life outside of big cities, she moved to Burlington Vermont where she worked as Sous Chef at several Burlington eateries as well as The Inn at Shelburne Farms - a 1400 acre non-profit environmental education center and working farm located in Lake Champlain in Shelburne Vermont. Hilary moved to Lancaster County and started The Scarlet Runner in 2012.
